Chicken Noodle Soup

Cold weather brings on sickness especially if you have school age children. When fall approaches it is common that I will get a cold since school starts at the end of summer and goes into fall. My throat becomes irritated, and nose begins to run. Since it's that time of year, you want to try to fight off any illness before it takes hold of you, and the best way I have found is to start eating plenty of soup.

Eating hot soup and drinking hot herbal tea is one of my go to meals for sickness. A hot bowl of chunky chicken noodle soup is the best medicine. What or why would a child turn down chicken noodle soup? Sometimes my child might get set in her ways and put up a fight but once she tastes it then her mind changes quickly.

Chicken noodle soup is the easiest recipe to make. I make mine really simple since I am only concerned with the hot liquid. The chicken, noodles, and vegetables are a bonus. If you ever have a sore throat and it hurts to swallow, I suggest sipping on broths and hot tea until your throat feels better. I am sharing with you a simple chicken noodle soup I make at home when I feel under the weather.


1 lb chicken breast/chicken tenders
1 onion
2 to 3 stalks celery
2 to 3 carrots
1 Tsp chicken seasoning
1 Tsp thyme
2 bay leaves
½ package of egg noodles
Salt and pepper to taste

I wash the chicken then I cover with water in a saucepan and start cooking the chicken. I like to cook the chicken a bit before cutting it into chunks. Season the water generously with salt and pepper, chicken seasoning, and add 2 bay leaves. I chop the onion, celery and carrot. In a skillet, I sauté the onion and celery until tender. Before the chicken cooks thoroughly, I strain the chicken liquid through a sieve. I remove the chicken and place on a cutting board then cut into pieces to finishing cooking. I add the meat back to the sieved liquid then add the vegetables and noodles. If you already have cooked chicken and chicken broth then you can add the chicken to the broth along with the vegetables and cook until vegetables are tender. Cook the soup until vegetables are tender and the noodles al dente. Serve with some crackers or a grilled cheese sandwich on the side.

Leftover Beef Recipes

Here are three recipes using fully-cooked roast beef, steak, or ground beef. The rest of the ingredients are simple and usually kept on hand.

Scalloped Beef

2 cups of chopped roast, steak, or ground beef, fully-cooked
2 cups canned tomatoes, drained
Salt and pepper
1 cup beef or au jus gravy, or gravy leftover from pot roast
(May use more than 1 cup if needed.)
1 cup dried bread crumbs or croutons
2 tablespoons butter
Preheat oven to 350 degrees.
1. In a baking dish, arrange a layer of meat and tomatoes.
2. Season that layer with salt and pepper, and cover with a thin layer of gravy.
3. Continue layering the meat, tomatoes, salt, pepper, and gravy till used up.
4. Cover the top with the bread crumbs or croutons. Dot bits of butter over the crumbs.
Bake at 350 degrees for 30 minutes, or until hot through.

Baked Hash

2 cups of chopped roast, steak, or ground beef, fully-cooked
1 tablespoon butter
2 cups cold, cooked potatoes
2 cups beef broth
Seasoning to taste
Preheat oven to 350 degrees and grease a baking dish.
1. In a large sauce pan, melt the butter in the beef broth.
2. Add the chopped meat and potatoes, and mix together with the broth.
3. Season with salt and pepper to taste.
4. Pour into the greased baking dish.
5. Bake for 30 minutes at 350 degrees, or until hot through and nicely browned.

Creamed Hash over Toast

2 cups chopped roast, steak, or ground beef, fully-cooked
Salt and pepper
1 tablespoon chopped parsley
1 teaspoon dried onion flakes
1 cup cream sauce, recipe below
1. Combine the meat, seasonings, and cream sauce in a large sauce pan.
2. Cook over a low to medium heat until heated through.
3. Serve over slices of toast for an easy evening supper.

Cream Sauce Recipe

1 tablespoon butter
1 tablespoon flour
1 cup milk
1/2 teaspoon salt
Dash of black pepper

1. In a skillet, melt the butter, taking care not to let it brown.
2. Add the flour, stirring until it is smooth.
3. Add milk gradually, stirring constantly until it boils.
4. Season and use at once with the Creamed Hash Recipe.

Salsa Recipes Using Fresh Tomatoes

This is the perfect recipe to tickle your taste buds with fresh garden tastes. Nothing makes better salsa than fresh home grown tomatoes, crunchy just picked jalapeno's, and just ripe baby green bell peppers. If you have some of the ingredients but not all of them make a trip to your local farmers market or the produce section of your local grocery store for the ingredients you still need.

I usually wait to make this salsa until my tomatoes are ripe and ready and usually by that time I have ripe jalapeno's, green bell peppers, and green onions ready to be picked. Once you have all your ingredients together you can proceed with making the most delicious salsa you'll ever taste in your life.

For Your Homemade Salsa You Will Need

1. Three Large Tomatoes With The Top Cut Off And Peeled. Then Chop Your Tomatoes Up Into Very Small Pieces.
2. One Large Jalapeno With The Stem And Seeds Removed And Chopped Very Fine.
3. One Half Cup Fine Diced Green Bell Pepper.
4. One Tablespoon Fine Minced Fresh Garlic.
5. One Fourth Cup Fine Diced Fresh Cilantro.
6. One Half Cup Very Fine Chopped Green Onions Including Tops.
7. Three Tablespoons Lime Juice.
8. One Level Teaspoon Ground Sea Salt.
9. One Level Teaspoon Ground Black Pepper.

Put all of your ingredients into a large plastic container with a lid. Put the lid on the container and shake up your ingredients together very well to make sure all your ingredients get very well mixed together. You will now want to put the plastic container with the homemade salsa in it in the refrigerator for overnight.

You'll find that after it stays in the refrigerator over night that your flavors will have come together and mixed well with each other and you'll have one of the most delicious homemade salsas you'll ever taste in your life.
You should put your homemade salsa in a small bowl in the center of a large tray and add taco chips all around your small bowl of salsa. Have small bowls of guacamole, sour crème, and four cheese Mexican cheese to serve with your homemade salsa. I guarantee you people will love it made and served that way and people will be begging you for more.
